Amazing texture and flavourful curd. It’s impressive that the curd doesn’t make the cookie too soft. This takes real talent.

I don't even like lemon baked goods, but this one was amazing! Perfect flavour and texture.

LOVED the lemon. Which is interesting because I'm usually not a huge fan on lemon in baked goods. The poppy seeds are a good addition to for texture to an otherwise soft cookie!

Enjoyable even if you aren’t a big fan of lemon — not too sweet and a bit tart

Interesting concept, the stuffed cookie, but I’m not sure I would pick it over a lemon square. The lemon curd’s texture is lost inside the cookie, and the cookie’s texture is sacrificed to hold the lemon.
